WHere is an easy version of a cocktail from a new drinks list. This is a large-volume prepared mix that is loaded with tastes associated with festive period, making it excellent for a festive gathering. Any leftover cordial to use in morning drinks, sweets, or to mix additional servings of this cocktail.
The Bikini Cocktail
Makes enough for 10 guests
For the Citrus Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar
To make the Premix (produces 850ml, to serve 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish
Method
Making the Syrup: Combine the listed components inside a pot, bring to a light boil, stirring so the sugar melts. Next, take off the heat and leave to reach room temperature fully. Pour to a sterilised bottle, close it and refrigerate it in the refrigerator, it will last for around one month.
To make Cocktail Base: Combine all the liquid ingredients into one big jug, allow it to infuse for 60 minutes, then pass it through preferably using a fine cloth, making it perfectly clear.
When ready to serve: Add 85ml from the premix into your stirring glass packed with ice, and agitate gently for a minute until cold. Strain to a frosted cocktail glass or equivalent, decorate with the cranberries and finish using a light spray of the essential oil over the top.
